Servings: 2
2 chicken breasts
(butterflied (cut open like a book))
1 tablespoon olive oil
1/2 yellow or red onion
(diced)
1/2 bell peppers
(diced)
1 cup rice
((cooked, use a rice cooker or easy rice for simplicity))
1 cup broccoli
(steamed or sauteed)
1 tablespoon lawry's seasoning salt
salt and pepper to taste
1 tablespoon sweet heat seasoning
Step 1:
Preheat the oven to 425°F (220°C).
(5-10 minutes.)
Step 2:
Prepare the chicken breasts: Butterfly the chicken breasts by cutting each one in half horizontally to make them thinner and ensure even cooking.
Tip: Butterflying the chicken allows it to cook quickly and evenly.
Step 3:
Rub the chicken breasts with oil and season generously with Lawry's seasoning, salt, pepper, and sweet heat seasoning.
Tip: For extra flavor, let the chicken sit for a few minutes after seasoning before baking.
Step 4:
Place the seasoned chicken breasts on a baking sheet and bake for 17 minutes, or until the chicken reaches a safe internal temperature (165°F or 75°C).
(17 min)
Tip: Check the chicken with a meat thermometer to ensure it’s fully cooked.
Step 5:
While the chicken bakes, cook the rice in a rice cooker or use your preferred method (easy rice works great)
(15-20 minutes (depending on rice type))
Step 6:
Steam or sauté the broccoli: Steam the broccoli until tender (about 5-7 minutes), or sauté it in a little oil over medium heat for 4-5 minutes until crisp-tender.
(5-7 minutes for steaming, 4-5 minutes for sautéing.)
Step 7:
Sauté the vegetables: In a skillet, heat a little oil over medium heat. Add the diced onion and bell pepper, and cook until softened
(about 3-4 minutes)
Tip: Stir occasionally to avoid burning the onions and peppers.
Step 8:
Once the chicken is done baking, remove it from the oven, and let it rest for a 5-10 minutes. Then, cut the chicken into bite-sized pieces.
(10 min)
Tip: Letting the chicken rest ensures the juices redistribute, keeping it moist.
Step 9:
Assemble the bowl: In a bowl, layer the rice, sautéed onions and peppers, steamed or sautéed broccoli, and the cut-up chicken.
Step 10:
Top with your choice of toppings: Add guacamole, sour cream, hot sauce, and shredded cheese (or any other optional toppings you like).
